Vegan Mexican Street Corn

Enjoy the flavors of traditional Mexican street corn without the need for a grill This vegan version is creamy, tangy, and packed with delicious spices.

Ingredients:

  • 4 ears of corn, husked
  • 1/4 cup vegan mayonnaise
  • 1/4 cup vegan sour cream
  • 1/2 cup finely chopped fresh cilantro
  • 1/2 cup finely chopped green onions
  • 1/2 cup vegan parmesan cheese
  • 1 teaspoon chili powder
  • 1 lime, cut into wedges

Instructions:

Boil the corn in a large pot of water for 5-7 minutes, or until tender

Drain and set aside

In a small bowl, mix together the vegan mayonnaise and vegan sour cream

Brush the corn with the mayonnaise mixture, then sprinkle with cilantro, green onions, vegan parmesan cheese, and chili powder

Squeeze lime wedges over the corn before serving
