As an alternative to regular burgers, these Sweet Potato Burgers with Avocado-Lime Sauce are both healthy and tasty. The sweet potato patties are full of good things for you and have a great crispy outside. The avocado-lime sauce is creamy and adds a nice fresh taste.
Ingredients:
- 2 medium sweet potatoes, peeled and grated
- 1 can 15 oz black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin powder
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 avocado, peeled and pitted
- Juice of 1 lime
- 1/4 cup plain Greek yogurt
- 4 whole wheat burger buns
- Lettuce, tomato, and onion slices for garnish
Instructions:
Turn on your oven and heat it up to 375F 190C
Add the breadcrumbs, red onion, minced garlic, cumin powder, chili powder, salt, and pepper to a large bowl
Then add the grated sweet potatoes
Mix everything together well
Take the mixture and shape it into four burger patties
Then, put them on a baking sheet that has been lined with parchment paper
Put the sweet potato burgers in an oven that has already been heated
Bake them for 25 to 30 minutes, flipping them over halfway through, until they are firm and golden brown
Make the avocado-lime sauce while the burgers are in the oven
Put the Greek yogurt, avocado, and lime juice in a blender or food processor and blend them together
Mix until its smooth
To taste, add salt and pepper
Put the whole wheat burger buns in the oven and toast them for a few minutes, until they get a little crispy

On the bottom bun, put a lettuce leaf
