This Paleo Beet Salad with Goat Cheese and Toasted Almonds is a delicious and nutritious dish that combines the earthy sweetness of beets with the creaminess of goat cheese and the crunch of toasted almonds. The balsamic vinaigrette adds a tangy contrast, making it a perfect paleo-friendly salad for any occasion.

Ingredients:

  • 3 medium-sized beets, peeled and thinly sliced
  • 4 cups mixed greens e

  • 1/2 cup goat cheese, crumbled
  • 1/4 cup sliced almonds, toasted
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar

Instructions:

Set the oven temperature to 175C 350F

Almond slices should be spread out on a baking sheet and baked for five to seven minutes, or until golden brown

Take out and leave to cool

Combine the mixed greens and sliced beets in a large mixing bowl

To make the dressing, combine the extra virgin olive oil, balsamic vinegar, honey if using, salt, and pepper in a small bowl and whisk together

Pour the dressing over the mixture of beets and greens, tossing to coat evenly
