Ingredients:
- 1 cup all-purpose flour
- 1 cup water
- 1/2 cup vegan butter
- 1 cup almond milk
- 1/4 cup cornstarch
- 1/4 cup cocoa powder
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- Pinch of salt
- Vegan chocolate chips for topping
Instructions:
Preheat oven to 400F 200C
In a saucepan, combine water, vegan butter, and a pinch of salt
Bring to a boil
Reduce heat to low, add flour, and stir continuously until the mixture forms a ball and pulls away from the sides of the pan
Remove from heat and let cool for 5 minutes
Transfer mixture to a piping bag and pipe eclairs onto a baking sheet lined with parchment paper
Bake for 25-30 minutes or until golden brown and puffed up
Let cool completely
In another saucepan, whisk together almond milk, cornstarch, cocoa powder, maple syrup, and vanilla extract over medium heat until thickened
Slice cooled eclairs lengthwise and fill with the chocolate cream mixture
Melt vegan chocolate chips and drizzle over the filled eclairs
Serve and enjoy
