Ingredients:
- 2 large onions, thinly sliced
- 2 tablespoons unsalted butter
- 2 cups Greek yogurt
- 1/4 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- 1/4 cup grated Parmesan cheese
- Chopped chives for garnish
Instructions:
In a large skillet, melt the butter over medium heat
Add the thinly sliced onions and cook, stirring occasionally, until they turn deep golden brown and caramelized
This should take about 20-25 minutes
Remove the caramelized onions from the skillet and let them cool to room temperature
In a mixing bowl, combine the Greek yogurt, mayonnaise, garlic powder, onion powder, salt, black pepper, dried thyme, and dried rosemary
Mix until well combined
Add the grated Parmesan cheese to the yogurt mixture and stir to incorporate
Once the caramelized onions have cooled, add them to the yogurt mixture and mix thoroughly
Refrigerate the dip for at least 30 minutes before serving to allow the flavors to meld
Garnish with chopped chives before serving
Serve with chips, crackers, or fresh vegetables for dipping
