Toasted Oat & Blueberry Smoothie

A vegan smoothie like this is a tasty and healthy way to start the day. Toasted oats give it a nutty taste and a satisfying texture. Blueberries and banana naturally add sweetness. Its a great choice for breakfast or a snack because its full of fiber, antioxidants, and plant-based protein.

Ingredients:

  • 1/2 cup rolled oats, toasted
  • 1 cup fresh or frozen blueberries
  • 1 ripe banana
  • 1 cup almond milk or any plant-based milk of choice
  • 1 tablespoon maple syrup optional
  • 1 tablespoon chia seeds optional

Instructions:

In a dry skillet, toast rolled oats over medium heat until lightly browned and fragrant, stirring frequently, about 3-4 minutes

In a blender, combine toasted oats, blueberries, banana, almond milk, and maple syrup if using

Blend until smooth and creamy

If desired, add chia seeds to the blender and pulse a few times to combine

Pour into glasses and serve immediately, garnished with extra blueberries if desired
