Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup raspberry preserves
Instructions:
Preheat your oven to 350F 175C and grease a 9x9 inch 23x23 cm baking pan
In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
In a separate bowl, whisk together the flour, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients and mix until a crumbly dough forms
Press half of the dough into the bottom of the prepared baking pan to create an even layer
Spread the raspberry preserves evenly over the dough in the pan
Sprinkle the chocolate chips over the raspberry layer
Crumble the remaining dough over the top of the chocolate chips
Bake in the preheated oven for 25-30 minutes or until the top is golden brown
Allow the bars to cool completely in the pan before cutting into squares
