Transform your leftover turkey into a hearty and flavorful soup. This Turkey Noodle Soup is packed with wholesome ingredients and comforting flavors, making it the perfect way to savor the goodness of Thanksgiving or any roasted turkey dinner.
Ingredients:
- 4 cups shredded leftover turkey
- 8 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, diced
- 1 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 2 cups egg noodles
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Put in the carrots, onion, and celery
Cook the vegetables in oil until they are soft
After you add the minced garlic, cook for one more minute
Add the chicken broth, thyme, rosemary, bay leaf, salt, and pepper, then the turkey shreds
Once the soup starts to boil, lower the heat and let it cook slowly for 20 minutes
After you add the egg noodles, keep the sauce simmering until the noodles are done
Take out the bay leaf and, if necessary, change the seasoning
Serve hot with fresh parsley on top
