Ingredients:
- 2 ripe peaches, halved and pitted
- 4 cups mixed greens e

- , arugula, spinach, and lettuce
- 4 oz honey goat cheese, crumbled
- 1/2 cup spiced pecans, roughly chopped
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions:
Preheat your grill to medium-high heat
Brush the peach halves with a little olive oil and grill them, cut side down, for about 2-3 minutes until grill marks appear
Flip and grill for an additional 2-3 minutes
Remove from the grill and let them cool slightly
In a small saucepan, combine balsamic vinegar and honey
Bring to a simmer over medium heat and cook for 3-4 minutes until it slightly thickens
Remove from heat and let it cool
In a large salad bowl, add the mixed greens
Slice the grilled peaches into thin wedges and add them to the greens
Sprinkle crumbled honey goat cheese and spiced pecans over the salad
Drizzle the balsamic-honey dressing and extra virgin olive oil over the salad
Season with salt and pepper to taste
Toss everything gently to combine all the ingredients
Serve immediately and enjoy
