Ingredients:
- 4 medium zucchinis
- 2 cups cooked shredded chicken
- 1 cup Alfredo sauce sugar-free
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish optional
Instructions:
Turn on the oven and heat it up to 400F 200C
First, cut the zucchinis in half lengthwise
Then, use a spoon to remove the seeds and flesh, leaving shells that are about 1/4 inch thick
Put olive oil in a pan and heat it over medium-low heat
For about one minute, until the garlic smells good, add the minced garlic
To make it hot, add the Alfredo sauce and shredded chicken to the pan and stir them together
Add pepper and salt to taste
Put some chicken Alfredo into each zucchini boat
On top of each boat, put some mozzarella and Parmesan cheese
Put it in an oven that is already hot and bake for 20 to 25 minutes, or until the zucchini is soft and the cheese is melted and bubbly
If you want, you can add fresh parsley as a garnish before serving
