Ingredients:
- 8 cups vegetable broth
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 thumb-sized piece of ginger, sliced
- 1 cinnamon stick
- 3 star anise
- 4 cloves
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 8 ounces rice noodles
- 1 cup shiitake mushrooms, sliced
- 2 cups bok choy, chopped
- 1 cup bean sprouts
- 1/2 cup fresh cilantro, chopped
- 1/4 cup green onions, chopped
- 1 lime, cut into wedges
- Sriracha or chili sauce, to taste
Instructions:
In a large pot, combine vegetable broth, onion, garlic, ginger, cinnamon stick, star anise, cloves, soy sauce, and maple syrup
Bring the broth to a boil, then reduce heat and let it simmer for 30 minutes to allow flavors to meld
While the broth is simmering, cook rice noodles according to package instructions, then drain and set aside
Strain the broth through a fine mesh sieve, discarding the solids
Return the strained broth to the pot and bring it back to a simmer
Add shiitake mushrooms and bok choy to the broth, cooking until tender, about 5 minutes
To serve, divide cooked rice noodles among bowls and ladle the hot broth and vegetables over the noodles
Top each bowl with bean sprouts, cilantro, green onions, and a squeeze of lime juice
Serve with Sriracha or chili sauce on the side for added heat
