Ingredients:
- 4 medium zucchinis, spiralized into noodles
- 6 slices of nitrate-free bacon, chopped
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 teaspoon red pepper flakes optional
- 1/4 cup pine nuts optional, for garnish
Instructions:
In a large skillet, cook the chopped bacon over medium heat until it becomes crispy
Remove bacon from the skillet and set aside on paper towels to drain excess grease
In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant
Add the spiralized zucchini noodles to the skillet and saut for 2-3 minutes until they begin to soften but are still slightly crunchy
Return the cooked bacon to the skillet and add the halved cherry tomatoes, chopped basil, and red pepper flakes if using
Drizzle olive oil over the ingredients in the skillet and toss everything together
Cook for an additional 2-3 minutes until the tomatoes start to soften
Season with salt and pepper to taste
Serve the bacon and zucchini noodles hot, garnished with pine nuts if desired
