This BBQ Steak Taco Salad with Homemade Tortilla Bowls is a delightful combination of smoky grilled steak, fresh salad greens, and zesty toppings. The homemade tortilla bowls add a fun and crunchy twist to this classic salad. Its the perfect dish for a flavorful and satisfying meal.

Ingredients:

  • 2 large flour tortillas
  • 1 lb flank steak
  • 1/4 cup BBQ sauce
  • 1 cup mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup black beans, rinsed and drained
  • 1/4 cup corn kernels
  • 1/4 cup cilantro leaves, chopped
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1 lime, cut into wedges
  • Salt and pepper to taste
  • Cooking spray

Instructions:

Preheat your grill to medium-high heat

Season the flank steak with salt and pepper, then brush both sides with BBQ sauce

Place the steak on the grill and cook for about 4-5 minutes per side for medium-rare, or until your desired level of doneness is reached

Remove the steak from the grill and let it rest for a few minutes before slicing it thinly

While the steak is resting, preheat your oven to 375F 190C

Spray both sides of the flour tortillas with cooking spray and place them over an upside-down oven-safe bowl to form a bowl shape

Bake for about 10 minutes or until they are crispy and golden brown

In a large mixing bowl, combine the mixed salad greens, cherry tomatoes, red onion, shredded cheddar cheese, black beans, corn kernels, and cilantro leaves

Toss to combine

To assemble the taco salads, place the crispy tortilla bowls on serving plates

Fill each tortilla bowl with the salad mixture

Top the salads with the sliced BBQ steak

Drizzle sour cream and salsa over the top of each salad

Garnish with lime wedges and additional cilantro leaves, if desired
