Ingredients:
- 1 lb tortellini, cheese-filled
- 4 cups chicken broth
- 2 cups sharp cheddar cheese, shredded
- 1 cup heavy cream
- 1/2 cup onion, finely chopped
- 1/2 cup celery, finely chopped
- 1/2 cup carrots, finely chopped
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1/4 cup unsalted butter
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Melt the butter in a big pot over medium-low heat
Put in the garlic, onion, celery, and carrots
Cook the vegetables in oil until they are soft
Add the flour and stir it in
Cook for two to three minutes to get rid of the taste of the raw flour
Whisk in the chicken broth slowly so that there are no lumps
Salt and pepper should be added
Bring to a low boil
Turn down the heat
Add the tortellini and cook it according to the directions on the package
Add cheddar cheese and stir it in after the tortellini is cooked until it is smooth and melted
Add the heavy cream and keep cooking until the soup is hot all the way through
If necessary, change the seasoning
Serve hot with fresh parsley on top
