Blackberry Vanilla Jam

The flavor combination of sweet blackberries and the fragrant vanilla bean in this homemade jam is delightful. This delightful preserve is enhanced by a hint of lemon, giving it a refreshing zing thats ideal for spreading on toast or using as a topping.

Ingredients:

  • 4 cups fresh blackberries
  • 2 cups granulated sugar
  • 1 vanilla bean, split and seeds scraped
  • 1 lemon, juiced and zest
  • 1/2 teaspoon butter optional

Instructions:

Wash and thoroughly dry the blackberries

In a large saucepan, combine the blackberries, granulated sugar, and the scraped seeds from the split vanilla bean

Stir in the lemon juice and lemon zest

If desired, add the optional butter to reduce foaming

Place the saucepan over medium-high heat and bring the mixture to a boil, stirring constantly

Once boiling, reduce the heat to medium-low and let it simmer for about 20-30 minutes, or until the jam thickens and reaches the desired consistency

Stir occasionally

Remove the saucepan from heat and discard the vanilla bean pod

Allow the jam to cool for a few minutes before transferring it to sterilized jars or containers

Seal the containers and let the jam cool completely before storing it in the refrigerator

Enjoy your homemade blackberry vanilla jam on toast, in yogurt, or as a delicious topping
