Ingredients:
- 1 cup couscous
- 2 cups water
- 1 small cauliflower, cut into florets
- 200g primosale cheese, diced
- 2 eggs
- 1/4 cup grated Parmesan cheese
- 1/4 cup milk
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh basil leaves for garnish
Instructions:
In a medium saucepan, bring 2 cups of water to a boil
Once boiling, add the couscous, remove from heat, cover, and let it sit for 5 minutes
Fluff the couscous with a fork and set it aside
Steam or boil the cauliflower florets until they are tender, about 5-7 minutes
Drain and set aside
In a large mixing bowl, whisk together the eggs, grated Parmesan cheese, milk, salt, and pepper
Add the cooked couscous, steamed cauliflower, and diced primosale cheese to the egg mixture
Stir everything together until well combined
Preheat your oven to 350F 175C
Grease a baking dish with olive oil
Pour the couscous mixture into the prepared baking dish and spread it out evenly
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the sformato is set
Remove from the oven and let it cool for a few minutes before slicing
Garnish with fresh basil leaves before serving
