Ingredients:
- 2 cups cooked rice
- 1/2 lb pork, thinly sliced
- 1/2 cup frozen peas and carrots
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- 1 egg, beaten
- Salt and pepper to taste
- Green onions for garnish
Instructions:
In a large skillet or wok, heat the vegetable oil over high heat
Add the pork slices and minced garlic
Stir-fry the pork until its thoroughly cooked
Transfer the pork to one side of the skillet and cover the other side with the beaten egg
